Grilled Pepper Pizza

Ingredients:

Dough:         

2 cups Flour

6 tablespoons dry milk

1 tablespoon olive oil

1 teaspoon instant dry yeast

1 teaspoon dry basil

1 teaspoon butter

 1 cup Warm water

Toppings:

3 tablespoon Caldo grilled pepper salad

2 tablespoons parmesan cheese

3 tablespoons tomato sauce

 

Directions:

Combine dry ingredients first, and then add oil, butter and water gradually while the mixer is running until the dough forms into a ball

 Cover with plastic wrap and leave at room temperature and let set for 3 hours

Roll the dough into lightly greased pizza pan using 1 tablespoon olive oil.

 Make holes in the dough using a fork and put all toppings

Preheat oven to 375 degrees

Cook for 25 min

 

Tip:

You can use store bought dough if you need to save time.

Spicy Mediterranean Burger

Ingredients:

1 lb. ground beef (or ground turkey)

4 hamburger buns

½ yellow onion minced

1 tablespoon Caldo harissa

1 tablespoon olive oil

Salt, pepper to taste

1 teaspoon paprika

To spread on burger buns:

1 tablespoon mayonnaise

1 tablespoon Caldo Harissa

 

Directions:

Mix all ingredients with ground beef

Shape into 4 patties

Let set for an hour in the fridge

Grill or use a grill pan to grill on high heat.

Serve burgers on buns

Mix mayonnaise and Caldo Harissa and spread on hamburger buns

 

Tip:

You can add toppings such as tomatoes, spinach and peppers

Caldo Chicken Sandwich

Ingredients:

1 lb. chicken breast

1 tablespoon Caldo poultry rub

2 tablespoons olive oil

1 teaspoon lemon juice

½ red onion, minced

To spread on bread:

2 tablespoon mayonnaise

1 tablespoon Caldo Harissa

 

Direction:                 

Mix all ingredients with chicken and let sit for an hour in the fridge

Grill on high heat in the grill or in a griddle pan

Combine mayonnaise and harissa and spread in slices of Panini bread

Serve chicken on Panini bread with diced tomatoes and sliced red onions

Moroccan Fish Taco

Ingredients:

3 sprigs chopped parsley

 3 sprigs chopped cilantro

Salt, pepper to taste

1 tablespoon Caldo fish rub

1 tablespoon Caldo Harissa

1 small head of cabbage, shredded

1 red onion, minced

2 tablespoons parmesan cheese

2 tablespoons olive oil

 5 Corn tortillas, warmed

1 lb. white fish (tilapia, cod or mahi mahi)

1 tablespoon lemon juice

1 tomato, diced

Lime wedges, for serving

Greek yogurt

 

Directions:

Marinate the fish in olive oil salt, pepper and Caldo fish rub for 15-20 minutes then grill on high heat

In a large bowl, toss the cabbage with parsley cilantro, red onion and lemon juice. Let set for 10 min

To build taco, place tortilla in flat work surface. Smear with Caldo Harissa, top with fish chunks, shredded cabbage mixture, diced tomato, cheese and a dollop of Greek yogurt.

Mediterranean Octopus soup

Ingredients:

1 yellow onion, chopped

4 roma tomatoes, diced

1 tablespoon caldo harissa

1 lb. octopus

2 cloves garlic, minced

1 tablespoon tomato paste

1 teaspoon salt

½ teaspoon pepper

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon turmeric

1 teaspoon caraway

1 small bowl of cracked wheat

 

Directions:

In large pot with boiling water, boil the octopus for about an hour or until softened

In a large pot over medium heat, cook onion and garlic in olive oil until browned, add the boiled octopus and keep stirring for few minutes.

Stir in diced tomatoes, spices and tomato paste

Add 2 quarts of water and let cook for 20 min

Add the wheat and let cook for about 10 min or until it thickens

 

Tip:

Serve soup with lemon wedges.

The soup is best served immediately as the wheat continues to swell and thicken as the soup sits.

Add water (and some seasonings if needed) to thin the soup when reheating.

You can substitute octopus with calamari’s or shrimp

Sizzling egg rolls

Ingredients:

1 lb. ground beef

1 teaspoon paprika

1 teaspoon Caldo Harissa

1 tablespoon chopped parsley

Salt, pepper to taste

1 small white onion, chopped

2 roma tomatoes, seeds removed and diced

1 teaspoon soy sauce

1 tablespoon shredded parmesan cheese

Spring rolls pastry

 

Directions:

Cook onions and tomatoes in olive oil until softened, add ground beef and the rest of the ingredients and keep stirring

Cook until ground beef is fully cooked (about 10 min).

Add the parsley and cheese at the end to the ground beef mixture

Remove from the heat and let the mixture cool

Place a spring roll wrapper on a flat surface, add 2 tablespoons of ground beef mixture into a corner of the wrapper, and then roll the edge of the wrapper tightly around the mixture

In a large saucepan over high heat, add about 2 inches of vegetable oil

Put few egg rolls in the pan and cook for 2-3 minutes, turning them over couple times, until golden

Fry rolls or put in the oven for a lighter option (cook for 20 min at 350 degrees)

Mediterranean diet salad

Ingredients:

4 roma tomatoes, diced

1 red Onion, minced

1 Green bell pepper cut in small square pieces

1 Red bell pepper cut in small square pieces

1 tablespoon parsley, chopped

2 tablespoons Olive oil

1 tablespoon distilled white vinegar

1 teaspoon Caldo chimichuri

 

Directions:

In a large bowl, mix all the ingredients and add oil and vinegar right before serving the salad

You can serve the salad with garlic bread or simply a piece of baguette
